Not All Coffee Roasters Are Equal — Here’s Why It Matters
Most people understand that coffee quality starts with the bean. Fewer people realise how dramatically the roasting process shapes what ends up in your cup. At Running Wild Coffee in Mbombela (Nelspruit), we chose fluid-bed air roasting from the very beginning — because for specialty coffee, it is simply the better method.

How Drum Roasting Works
The vast majority of coffee roasters in South Africa — and globally — use drum roasters. In a drum roaster, coffee beans tumble inside a rotating metal drum that is heated from below. The beans roast through a combination of conduction (touching the hot drum surface), convection (hot air circulating inside the drum) and radiation (radiant heat from the drum walls).
Drum roasting produces good coffee. But it has limitations. The beans that contact the drum surface roast faster than those in the middle of the tumbling mass. This creates uneven roasting — a phenomenon called “tipping” or “scorching” — which leads to inconsistency in flavour and, in the worst cases, bitter or burnt notes that no amount of brewing technique can hide.
How Air Roasting Works
In a fluid-bed air roaster — the type we use at Running Wild Coffee — coffee beans are suspended on a cushion of precisely heated, rapidly moving air. Every bean is surrounded by the same temperature environment at all times. There is no contact with a hot metal surface. No scorching. No uneven roasting.
Crucially, air roasting allows us to roast to temperature rather than to colour. Most drum roasters judge roast completion visually — the colour of the bean and the timing. We measure the internal bean temperature, which gives us far greater precision and repeatability.
What This Means in the Cup
The practical difference is significant:
- Cleaner flavour: No chaff contamination (the papery skin is blown away during air roasting), no scorching. What you taste is pure bean character.
- Better acidity: Air-roasted coffees retain their natural organic acids more effectively, giving a brighter, more vibrant cup.
- Greater consistency: Batch-to-batch repeatability is higher with air roasting. Lodge and restaurant operators value this enormously — their guests expect the same exceptional cup every morning.
- No bitterness: The absence of hot-surface contact means no bitter compounds introduced by scorching.
